Fall is in the air. My thoughts go immediately to pumpkin, cinnamon, apples...TARTE TATIN. Tarte Tatin is a pie that you start on the stove, slow cooking halved, peeled Golden Delicious apples in butter and sugar. Once they become brown and caramelized, you place a piece of puff pastry on top, brush on some egg wash and then bake in the oven until the dough is brown and crispy. You take the pie out and let it rest for a few minutes, then flip it over and VOILA, upside down...

This past week we made gluten-free beef and sausage lasagna for one of our regular clients.

We used the same homemade, slowly simmered, delicious meat sauce we do in our regular lasagna and same yummy cheeses (ricotta, cottage and Gruyere Swiss cheeses).

This is one of the ways that my business is different; we can accept different requests and LOVE to do so to meet the needs of our clients.
