Fall is in the air. My thoughts go immediately to pumpkin, cinnamon, apples...TARTE TATIN. Tarte Tatin is a pie that you start on the stove, slow cooking halved, peeled Golden Delicious apples in butter and sugar. Once they become brown and caramelized, you place a piece of puff pastry on top, brush on some egg wash and then bake in the oven until the dough is brown and crispy. You take the pie out and let it rest for a few minutes, then flip it over and VOILA, upside down...
